You weight is appropriate.
Even if you are working out, enough protein can be obtained being a vegan.
Please dont eliminate the carbohydrates completely from your meal as it is impossible to keep eating only protein rich and diet foods all your life and feel lathargic. low and food deprived.
Consume 5 to 6 small protein and nutrient rich meals. You are already making good choices. Below are some wholesome protein rich combinations:
Cheese/paneer sandwitch
sprouts with chappati
Low fat youghurt with chappati
Cereals with low fat milk
oats with low fat milk
multi grain chappatis
egg white omlette/scrambelled egg with wheat toast
Fish with brown rice
