Admittedly as a Brit I'm guessing a little about US society here, but I would imagine that the higher response to people who put "atheist" is connected to it being harder to find atheists offline. People specifically looking for Christians, Jews, Muslims, whatever, would have many more offline options available to them without needing a dating site.
