It appears that parts of their brains are truly asleep, and, at the same time, other parts are awake. The parts that regulate waking or consciousness are asleep, so the next day there are no memories of eating the night before.

Habitually the person may go to a place where edible food is stored. Food consumed by sleep eaters tends to be either high sugar or high fat. Consumption of odd combinations of foods have also been reported. Oddly, one person was discovered cutting a bar of soap into slices and then eating it as if it were a slice of cheese!
